We have some new flavors at the Doghouse for your next visit that just may keep you around a little longer.

We received many requests to have some small bites or appetizers available in the saloon. Some requests came from guests wanting a quicker, smaller portion to eat; some were locals looking for a beverage and a bite; and others wanted some ‘tapas’ before dinner. General Manager Rita and Chef Justin were listening. We are proud to introduce our Doghouse Bites.

Our Bites Menu features a small array of flavors to satisfy a hungry wrangler. Served from 4PM to 8PM each night, they are the perfect starter or finisher to the evening. For a light bite enjoy our Housemade Tortilla Chips with guacamole and salsa or the Chef’s Board with thinly sliced prosciutto, Spanish chorizo, olives, cheeses, and crackers. For those with a medium hunger try the Grand Lasso Pretzel with beer cheese and choice of mustards, the Fried Brussels Sprouts with bacon, shallots, herbs and balsamic, or the Pork Posole Cheese Nachos. These nachos will make you ‘fall off your saddle’ for the green chile posole and cheese topped on house-made tortilla chips.

For those looking for something a little more filling here are a couple of options. Our Prime Rib Sliders with horseradish on a brioche bun are sure to please your appetite, or grab a glass of red wine and order the Three Way Filet. Petite filets are cooked to your liking with three sauces for dipping including chimichurri, red wine demi, and roasted garlic aioli.

There are so many flavors to try and each one is worth a visit. Whether you order for yourself or to share with friends, either is the perfect start of the evening. Now you can easily pair these flavors with any of our local craft beers, a glass of wine, or a margarita and have the perfect accompaniment. Still not persuaded? Try a new drink from our brand new Signature Cocktail Menu.

The new cocktail menu has 12 perfect drinks depending on your preference. Of course, it features our signature margaritas the Rita, Prickly Pear, and fiery Hell Fire. The other nine feature some new additions including freshly squeezed lemon and lime juices, homemade simple syrup and prickly pear juice, and fresh fruits.

For those looking for vodka mixes, the Arizona Sunset, a refreshing blend of Skyy Vodka, pineapple juice, lime juice and grenadine. Or go traditional with our Tanque Verde Mule, made with Russian vodka, lime juice, bitters, and Crabbie’s orange ginger beer float. Both are the perfect sunset sipping cocktails on our back patio.

For gin lovers, we have a few choices. The Gold Rush features Hendrick’s Gin and Cielo Rojo Bacanora (a rare wild Silvestre Maguey Agave spirit made in limited small batches,) yellow bell pepper, basil, lemon juice, and orange bitters, which is the perfect ‘just got off the saddle’ pick me up. Or try our Rincon Rose featuring Citadel Gin with Ciccio Fennel liqueur, strawberry, lemon juice, and sparkling wine.

For the bourbon lovers try our Vaquéro Piña, Outlaw, or the new Gila Monster with Cave Creek Bourbon, sweet vermouth, crème de mure (blackberry liqueur,) and bitters. The Gila is already a house favorite and sure to become yours. There are a few others to name but you will just have to make your way here to see.
