Bourbon Chicken Soup

This soup is a holiday favorite. It is a cream-based soup with fresh ingredients and your favorite bourbon to add that extra kick of life to the recipe. The use of heavy cream adds a decadent texture to the soup. Also, sautéing the ingredients together versus boiling them added great flavor and aroma to the soup.

  • 2 Cups Diced Potatoes
  • 2 Cups Diced Onions
  • 2 Cups Diced Celery
  • 2 Cups Mushrooms
  • 4 Tablespoons Cajun Seasoning
  • 1 Cup Bourbon
  • 1 Quart Heavy Cream
  • 3 Quarts Chicken Stock
  • 1 Tablespoon Garlic
  • 3 Tablespoon Scallions
  • 1/2 Cup Flour
  • 1/2 Cup Butter
  • 3 Cups Hot Italian Sausage Chunks
  • 1 Pound Chicken Breasts
  • To Taste add Salt and Pepper

In a large pot over medium heat add butter, chicken, sausage, onions, celery, and mushrooms. Saute until chicken and sausage is cooked through and the vegetables are tender. Add garlic and cajun seasoning and glaze with bourbon. It will flame so be careful! Add flour to make a roux in the pot. Cook for a minute and then add the chicken stock. Cook until liquid thickens then add diced potatoes and heavy cream.

It is the perfect time to start planning your delicious holiday spreads. Be sure to incorporate family secret for your friends and family to indulge in for your get-togethers.
