Enjoy the best prickly pear pancake recipe out there! As you may know, Tanque Verde Ranch is famous for their Prickly Pear recipes, mainly, the Prickly Pear Margarita. Being in the prime-ripe season for the Prickly Pear fruit in August, we host our annual Prickly Pear Harvest where guests can come and experience collecting the fruit and preparing it for foods, drinks, treats, and even… pink prickly pear pancakes!

New this year for our 3rd Annual Prickly Pear Harvest is our Pink Prickly Pear Pancakes with Prickly Pear syrup served on Sunday’s Breakfast Ride. Ride on horseback, mountain bike, or walk up to the Old Homestead where you will find delicious pink stacks of pancakes along with homestyle breakfast buffet items.

Prickly Pear Pancake Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 cup of milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1/4 cup prickly pear syrup

Prickly Pear Pancake Directions:
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, prickly pear syrup, egg and melted butter; mix until smooth. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Prickly Pear Syrup Ingredients:

  • 2 cups prickly pear juice
  • 3/4 cup agave syrup
  • 1 lemon zested and juice from half the lemon
  • 1 stick of cinnamon
  • 1 clove

Prickly Pear Syrup Directions:
Add together and bring to a simmer, then turn off, strain into serving a dish.The syrup should be just slightly thinner than maple syrup in consistency.
